Like many kids, my daughters LOVE having ice cold treats in the summertime.  After an afternoon of getting all hot and sweaty playing outside, they want nothing more than to have a cold sticky mess dribbling down their chins and hands.  As I was checking out ice pop options at the grocery store recently, I thought, "I wish someone would just make an all-fruit, all-natural, no-sugar added, inexpensive ice pop."  Then I thought, "Wait a minute-- I can do that!"  And I realized that I could do it without having to get out my blender to puree anything or my ice pop molds that are a pain to clean up.

These Frozen Watermelon Kabobs are so simple to make, super healthy, very inexpensive, and loads of fun to eat.  Your kids can even get involved in the kitchen to help you make them!

All you need is a watermelon, a melon baller, and some bamboo skewers.  I set our kabobs on a parchment covered baking pan, but you could also put them in a shallow plastic container.  We also used a few plastic sword picks to make some tiny kabobs.

I thought that my daughters (age 4 & 5) would be able to help use the melon baller, but it really was too challenging.  They kept getting scraps instead of full, smooth, spheres.  So I took over and then gave them each a bowl filled with watermelon balls to place on the skewers.

Make sure that your kids are old enough to handle the pointy end of the skewer appropriately, and make sure to supervise closely.  See Lena's apron in this photo?  Her father sewed it during his required home-ec class back in high school, and as a sign of protest he choose the ugliest fabric he could find.  We call it, "Rats And Cats In A Tar Pit."  Nice, huh?

Place all your kabobs on a parchment lined baking pan or shallow plastic dish and pop them in the freezer.  Make sure they're not touching.

And after a few hours (or overnight) you'll have these frosty, delicious, icy-cold treats.

When they first come out of the freezer, they are rock hard, and not too much fun to eat.  They need a good 10 minutes of defrost time before you can chomp into them.  We had the most luck by holding them horizontal and taking nibbles off of each watermelon chunk.
