"Love The Earth" Lemonade- Fruity Earth Day Drink For Kids

Love The Earth Lemonade.  Light and refreshing drink for Earth Day.  Fruity green and blue ice cubes swirl around to make a healthy treat for kids.  No artificial colors!

My kids love a good themed snack!  They can be such a fun and simple way to celebrate holidays or seasons.  Many of the choices that you see online, however, are filled with artificial colors or loaded with sugar.  Some of that is okay, but if I can come up with a more natural & healthier alternative, I will!  Last year we made a Blueberry Earth Day Smoothie, but this year we went for something lighter and more refreshing.

This "Love The Earth" Lemonade uses natural fruits to include blue and green for Earth Day.  It does has a bit of sugar, but much less than many other treats.  It also happens to be super yummy, and the blue and green swirling ice cubes are so much fun!

First, make or buy some lemonade.  Making it yourself is super simple.

Squeeze and juice your lemons.  I used 9 small to medium sized Meyer lemons and got about 3/4 cup of lemon juice.  Set the lemon juice aside.  Measure an equal amount of sugar, and an equal amount of water Since my lemons made 3/4 cup of juice, I measured 3/4 cup of sugar and 3/4 cup of water.  Heat the sugar and water in a small sauce pan over medium-low heat, stirring until the sugar has dissolved.

Next, add the lemon juice to the pan, stir and remove from the heat.  Set aside to cool.  When the mixture is cool, pour into a pitcher.  Add additional water until your lemonade is the strength you like.  My girls don't drink many sugary drinks, so their palates were happy with 8 additional cups of water.  It made a light and refreshing, but still flavorful drink.  Put your lemonade in the refrigerator.  Our batch was a little over a half gallon, which was plenty for us all to enjoy for several days.

Next it's time to make the special Earth Day ice cubes.  Our grocery store was out of fresh blueberries, so I grabbed a bag of frozen.  No biggie-- they're going to all be frozen anyway!  You'll also want a green apple.  The tartness and bright color of a of a Granny Smith is perfect for this drink.  Dice the apple into small bits.

Fill an ice cube tray with blueberries and apple dices.  If you can, try to put the skin of the apple facing out, so it will show well in the ice cubes.  Fill the ice cube tray with water and put in the freezer.

When your ice cubes are ready, pour a nice cold glass of lemonade and add some bright and fruity ice cubes.  You've got yourself some "Love The Earth" Lemonade, with peeks of blue and green swirling around the glass.

Add a colorful paper straw (or 2) to finish it off!
