Menu Plan Monday July 27-August 1


It's back!  I've had several people ask where "Menu Plan Monday" went.  I don't have a good answer, other than to say that it just....went away for a while.  My menu planning (and lots of other things) get quite a bit more relaxed over the summer time, but we're back in the regular swing of things now.  And since I'm planning our menus, I might as well share them with you!

Here's our plan for the week.  I've put a few things on the menu that I will double-- we'll eat some now and stash some in the freezer.  Once my husband is back to work in a couple of weeks, it will be nice to have some quick and easy things to grab, so I'm trying to fill it up in the next couple of weeks.

fruit served every day
Chocolate Zucchini Muffins (from Weelicious)
toast with butter and jelly
breakfast casserole

*I'm trying to find healthy-- but hearty-- vegetarian, make-ahead options for my husband to take to eat in the car on the way to work.  Anyone have anything that fits the bill?*


garden salad
sunbutter/peanut butter and jelly sandwiches
grilled cheese
pasta and marinara sauce


Blue Ribbon Granola Bars
cheese and crackers
cottage cheese


Mmmmm Minestrone, rolls, fruit
spinach stuffed shells, steamed broccoli, rolls, fruit
homemade pizza, garden salad, fruit
Very Veggie Black Bean Burgers, roasted potatoes, fruit
